The Elena Galeotti Agricultural Company operates in Pagliana, in the municipality of Firenzuola, in the heart of Alto Mugello, an Apennine area historically devoted to extensive livestock farming and forage production. Originally a family-run farm and now led by young women entrepreneurs continuing a tradition passed down through generations, the company spans over 90 hectares of arable land, meadows, and pastures, adopting organic methods since 1997.

Over time, it has developed an integrated multifunctional model combining cattle, sheep, and goat farming, on-farm forage production, and direct processing of milk and meat. Central to its activities is the production of Latte Fieno S.T.G., made in compliance with strict regulations that exclude silage and GMOs, ensuring quality, animal welfare, and environmental protection. The farm’s dairy processes raw milk using natural starter cultures from local microbes, enhancing technical autonomy and giving the cheeses a strong territorial identity.

Sustainable pasture management, based on rotational grazing and pasture alternation, contributes to soil fertility and biodiversity conservation. In addition to cheeses, the company produces processed meats and a goat milk-based cosmetic line, prioritizing direct sales and short supply chains. Through farmers’ markets and participatory spaces, it strengthens local networks based on cooperation, transparency, and sustainable rural development. The company is part of the Mugello Slow Food Network, participating in numerous initiatives.
