The Murge and the Alto Bradano areas, located between Apulia and Basilicata, form a hilly area characterized by fertile calcareous soils and a Mediterranean climate, suitable for hardy crops such as durum wheat, which has historically been central to the local economy and culture. In recent years, there has been renewed interest in local varieties and ancient grains, within a diversified agricultural context that also includes olive groves, vineyards, and extensive livestock farming.
In this context, the “Community Bread” initiative was launched in 2022 as a participatory agroecology project developed within the Agroecological District of the Murge and Bradano. The project took shape through the involvement of citizens, farmers, and associations, with the support of the Diocese of Altamura-Acquaviva delle Fonti-Gravina, with the aim of building a fair, transparent, and territory-based bread supply chain. In 2024, the cooperative “Le Comunità del Pane” was established, further consolidating the initiative.
The production activity is based on an integrated local supply chain that begins with the cultivation of ancient grains such as Senatore Cappelli, Saragolla Lucana, and MEB (Organic Heterogeneous Material), grown according to agroecological principles. Processing takes place within local circuits, and bread-making is carried out in a shared wood-fired oven, using sourdough and long fermentation processes. Weekly production is aligned with community demand, reducing waste and ensuring quality.
A distinctive feature of the initiative is the social traceability of the product and a shared ethical pricing system. In addition to production, the cooperative promotes educational and cultural activities, strengthening the relationship between producers and consumers. The project thus represents a collaborative model of rural development, capable of generating economic, social, and cultural value.
